Grilled vegetables


1 tbsp olive oil
1 clove garlic, minced
2 tsp snipped fresh rosemary or 2 tbsp snipped fresh basil
¼  teaspoon salt
4 cups mixed vegetables: egg plant, summer squash, zucchini, green beans, red onion, peppers etc.)

In a large boil, combine the oil, garlic, herbs and salt. Add vegetables and stir to coat. Spoon vegetables into grilling basket for barbecue and set on grill rack directly over medium-heat coals about 20 minutes or until vegetables are tender. Turn often so they don’t burn. (You can also bake the vegetables in a 350 degree oven for about 25 minutes or until tender.) Season to taste with pepper.
