Hummus
Hummus can be used as a dip for raw vegetables, tortilla chips or pita bread, or it can be spread on rice. Actually, hummus probably goes well with anything!
1 16oz can of chick peas
1/3 cup tahini
juice of one small lemon
2 cloves garlic (or more!), crushed
½ tsp salt
pinch of white pepper
2 tbsp toasted sesame seeds (optional)
Drain beans well. In blender or food processor, combine all ingredients except sesame seeds and purée until smooth. Scrape sides frequently. Stir toasted sesame seeds into hummus with a spoon. Store in a tightly-sealed glass container. If you use dried chick peas, simply soak and cook as you would for any dried bean before using. Yield: 2 ½ cups
